Butter Chardonnay – California, 2010 $17.99 Delivering on its name, this wine has an ethereal creaminess on the palate, woven with smooth vanillin scented oak. Tropical flavors of pineapple and honeydew intertwine delicately on the mid pallet and linger on to the finish.
The 2011 Butter Chardonnay finished primary fermentation at 14.8% alcohol and was then put through 100% secondary malolactic fermentation, converting the malic acid into lactic acid–hence the name “Butter”. Both fermentations were slow and cold in the presence of oak ,infusing the wine with well integrated notes of vanilla and preserving the wine’s natural freshness.
